CA 220. Professional Culinary Skills 2 This course will enable the student to further develop culinary skills in the kitchen environment. The student will learn skills in sanitation, recipe interpretation, recipe design, and meal preparation for commercial consumption. The student will engage in areas of cold kitchen and advanced meal preparation.
Prerequisite(s): CA 120 and HM 101 both with a C or better.
